EASY Garlic Parmesan Zucchini Saute
3 Zucchini, washed, ends cut off, peeled or unpeeled
4 Tbls of Margarine (I use Smart Balance Buttery Sticks)
1 ½ tsp Garlic Powder or 2 Garlic Cloves
1 tsp Black Pepper (preferably cracked)
½ tsp Sea Salt (no more, parmesan is a salty cheese)
1/3 cup Grated Parmesan Cheese
Melt margarine in pan on a little over medium heat. When pan is hot, add cut zucchini. Sprinkle garlic powder or garlic cloves, black pepper, and sea salt over zucchini. Allow zucchini to saute until desired firmness (some like it squishy and some like firm to bite). Remove pan from heat and while still hot, add 1/3 cup of grated parmesan cheese. Toss with pasta or use as a side dish, as is. Easy, cheesy!
