Cook brownies per directions on package. Allow the brownies to cool until set enough to pour our homemade cream cheese icing over top. Homemade cream cheese icing 8 oz package of cream cheese,softened 1/2 cup of margarine or butter,softened (I use Smart Balance Butter Sticks) 2 cups of powdered sugar (more if you like it sweeter-I don't) 1/2 tsp vanilla Food coloring (optional) Beat together cream cheese and margarine using a handheld or standup mixer to combine. Add powdered sugar slowly and beat until smooth. Add vanilla and desired color of food coloring and mix. The softer your cream cheese and margarine are, the easier it is to pour over the brownies. Place the brownies on parchment paper and pour icing over the top. Allow icing to harden for a few hours. Stack them on a plate. Put candles on the top, because you can't celebrate a birthday without candles to blow out. They're going to be messy and that's okay- it's more fun. Serve on plates with forks if you're concerned :)
